Living with diabetes

Many of you know I have type II diabetes. I've been experiencing high glucose lately, so I am back on checking off foods that raise it. My worst enemy is the whites. Potato, pasta, & breads to be specific. So I've scratched them off my eating list the last 2 to 3 weeks and that has helped. My problem, though, is that I feel the need to eat those foods. So the search began, and we found that barely is one of the best grains for diabetes. So far we've made barely noodles and barely pancakes. So far so good, the glucose is lower the next morning after the noodles. So tonight we threw this dish together.

1/2 recipe of barely noodles, 3/4 lbs. fresh shrimp, 1 summer squash, 1 green pepper, 1/2 onion, about 8 mushrooms, garlic, and about 1 cup tomato sauce. Cook the noodles, set a side in chilled water, prepare vegetables to you liking. Stir fry the vegetables in a wok. Stir fry the shrimp in the noodle pan, when done add the noodles to the shrimp. When the vegetables are done add the shrimp and noodles to the wok. Then add the tomato sauce, stir and serve. Season to taste. It was a great dish, I also sliced some fresh tomato's and added those just prior to serving. This would serve 4. I'll let you know tomorrow how my blood glucose was.
